We carry two lines of aged spirits: Organic Single Malt Whiskey, and American Whiskey Honey Liqueur.
Organic Single Malt Whiskey
Organic Single Malt Whiskey is an unpeated whiskey made in stills of our own design and construction. The spirit is aged in bourbon barrels. Our whiskey is produced using organic barley from our farm and local farms here in the Northwest.
Whiskey derives its name from the Gaelic word “water of life.” To us whiskey also means “food of life.” When making whiskey, quite a lot of “spent” grains are left over. For over 15 years we have raised pigs and chickens on “spent” grain. This diet is great for them because it is very similar to the seeds they find in a pasture. What they don’t eat we compost and use to grow potatoes, sunroots and other crops. By using the waste products (or what we call co-products) from whiskey making we make the farm more sustainable.
American Whiskey Honey Liqueur
Our second line of aged spirits is our American Whiskey Honey Liqueur. To produce it, we steep our Organic Single Malt Whiskey in honey and spices. Bees are an essential part of any farm. Without bees, many flowering plants have great difficulty reproducing. We keep bees on our farm to enhance the ecosystem and grow better food. As a bonus, our bees provide us honey. Combined with herbs this dynamic spirit has a wide spectrum of character and flavor. Perfect over ice after dinner!
