Whiskey is made from distilling fermented grain mash aging the resulting spirit in oak barrels.

In medieval times, Italians distilled alcohol from wine and used it as a medicinal treatment for smallpox. Early Scottish distillers couldn’t use wine because grapes weren’t cultivated in their harsh climate. Instead, the Scottish used barley based beer to distill the spirit we call whiskey. In the modern era, we have many different classes of whiskey based on grain type, fermentation style, distillation method and barrel selection. A new wave of craft distilled whiskeys pushes these classes to their edge.
