Rhubarb Cocktails
Start by making the rhubarb sugar syrup-
Ingredients:
12 cups chopped fresh rhubarb
2 cups water
3 cups organic sugar
Directions:
In a large saucepan cook rhubarb & water over low heat for 2 hours or until rhubarb is soft. Strain out the pulp & pour the remaining warm mixture into a large bowl. Stir in the sugar until it dissolves completely.
Now for the rhubarb cocktail-
Ingredients:
1/2 cup rhubarb sugar syrup
1/8 cup rum
1 cup ice
Directions:
Pour the syrup & rum into a cocktail shaker half full of ice. Shake well & serve in chilled hurricane glasses garnished with a slice of fresh rhubarb.
